Today marks the start of the "keep relaxing but start planning quietly for school" part of the holidays. I'm not really thinking about school as it's a long way away, but I do want to start gently compiling a stockpile of frozen lunchbox bits to lighten the anxiety in February.
So I tried adapting a nice, high (good) fat slice so that it was suitable for school. Basically, I took out the nuts lol.
Ingredients
Base
12 medjool dates, pitted, or regular dates pre-soaked in boiled water.
1 cup of pepitas (sunflower seeds. Good for parasites!)
1/3 cup raw Cacao powder
4 big tablespoons of coconut oil- melted, easy this time of year.
Blend and pour into a lined tin and freeze.
Raspberry Layer
2 cups of fresh raspberries (need to be sweet)
2/3 cup of Tahini
3 tablespoons of shredded coconut (preservative free)
1 tablespoon of melted coconut oil
6 tablespoons of Maple syrup
Blend and pour onto base layer and freeze for 1 hour.
Chocolate Layer
1/3 cup coconut oil melted
2-3 tablespoons pure maple syrup
1/3 cup raw cacao
Mix by hand until glossy and pour onto raspberry layer and freeze for 3 hours.
Slice and either enjoy now or freeze individually for school!
