We've all heard the chicken soup-for-illness thing. Made on real chicken bone broth it really can boost that immune system. My problem is my children don't really enjoy brothy soups. Strangely, although I can happily sip away at a cup of warm bone broth (don't knock it till you've tried it) I don't enjoy brothy soups either.
That's why I made a Thai inspired version, cos, who doesn't love Thai????
The noodles are literally the only thing that aren't too active in making you feel good but theyre yummy and filling. Aside from them its like a bowl of medicine! Except not gross and you cant overdose :)
This week the littlest one is coldy again, and the weather is changing, so I thought it was a good time for soup! We'd just had a chicken roast Sunday night, so I had a carcass ready to roll. You can make this with your pre-made broth/stock (see here for a recipe this week, or PLEASE buy a wholefood version, supermarket stocks will NOT work, sorry), or you can throw chicken carcass in and slow cook it all day to turn it to the broth, or put in some legs and wings to cook all day, then shred the meat for the soup. I love capsicum in this as its the bomb for Vitamin C intake, bok choi is a super antioxidant, and of course our friends ginger and turmeric are the legends of the anti-inflammatory world. Feeling better already!!
INGREDIENTS
1 FREE RANGE CHICKEN, CHICKEN CARCASS OR 500g LEGS AND WINGS
YOUR CHOICE OF VEGGIES- CARROTS, BOK CHOI, BROCCOLI, RED AND YELLOW CAPSICUMS, SHALLOTS ETC CHOPPED ROUGHLY
2 GARLIC CLOVES, FINELY CHOPPED
1 CAN OF COCONUT CREAM
3 TABLESPOONS OF FISH SAUCE'
1/2 TABLESPOON OF COCONUT SUGAR
1 GINGER CLOVE FINELY CHOPPED
2 TABLESPOONS OF GROUND GINGER
1 1/2 TABLESPOONS OF GROUND TURMERIC
1/2 TABLESPOON OF THAI SPICE
1 WHOLE LIME
2 PACKETS OF PAD THAI NOODLES
METHOD
Put chicken broth (see above and choose method for making your broth) in a big pot to boil. Add all the veggies and garlic for 5 minutes till starting to soften.
Add noodles and the rest of the ingredients save the coconut cream one by one, trying (don't burn yourself!) as you go so its made to your taste.
Add more of anything if you feel it needs it. Add the cream when noodles are almost soft, turning down to a low heat. Taste and add more of everything if you feel it needs it.
Serve immediately and feel the benefits!!
*Chilli might help to lift this soup, AND make poorly people better!
